Ethiopia, next to Lesotho, is the highest country in Africa and is known for its natural shade growing areas with acacia and stones. It’s no wonder that coffee crops have grown wildly in this region since the 9th century and that these coffees have a unique quality. Our coffee comes from the region of Kochere, which is located south of Yirgachefe at an altitude of around 1850-1950masl with an average temperature between 15 and 20 ° C. This climate allows the cherries time to fully develop before being harvested between October and January. The Kochere region is famous for producing coffees that are both fruity and floral. Our Kochere has notes of orange, nectarine, jasmine and caramel.
The beans are processed in the Kochere Washing Station. The station is located on a steep slope and reveals itself to visitor as a natural amphitheater, with the pulper, the fermentation tanks and the African drying beds winding along the slope. This coffee is washed using fresh spring water from the Ethiopian highlands and left to ferment for approximately 36 hours before being laid out on the African drying beds. This process allows the coffee to develop its intense fruity and floral aromas with notes of peach, orange, jasmine and caramel. We have roasted this coffee as filter to showcase these unique and delicious qualities.
